Happy Thanksgiving to all my friends both here in the US and abroad. Thankful to be employed, to be healthy and happy, and to once again take pleasure in cooking and crafting in my lovely home.
Miss D and I had a wonderful day with the family and better yet… I didn’t have to cook! WooHoo! Talk about Thankful. We headed over to the ‘rents early in order to catch the Macy’s Thanksgiving Day Parade and have some yummy egg-and-ham breakfast casserole and homemade lefse with our coffee. Num num num num.
My mom even made a round with tapioca flour so I wouldn’t have to cheat on my grain-free food plan. Then around early afternoon we headed into town for Thanksgiving dinner at the Irregardless Café. Sooooooooo good. I admit it. I cheated a little and had some of the sage-cornbread dressing. OMG. To. Die. For.
Today being Black Friday, Miss D and I have planned a nice, quiet day at home; away from the crowds. I’ve been baking up a storm with homemade granola & almond bread. Later we’ll fix some chicken-broccoli casserole and beef & broccoli stir fry over riced cauliflower. That ought to feed us through the week quick nicely!
As you can see, Miss D has other plans for her day. She’s enjoying the warm, sunny day, thankful not to be cooped up all day long.
What a cool day you had! …egg and ham breakfast … think I’m hungry ;o) btw: that’s a very nice sweater ;o)
